Job Duties
Nutrition and Special Diets Understanding of therapeutic diets (e.g., low sodium, diabetic, pureed, mechanical soft) Basic nutrition principles for older adults and veterans Food Safety and Sanitation Knowledge of safe food handling procedures (ServSafe certification is often preferred) Understanding of local, state, and federal food safety regulations Menu Planning and Food Preparation Ability to follow standardized recipes and menus Familiarity with batch cooking and portion control Cooking Skills Proficiency in preparing meals from scratch using various cooking techniques (e.g., roasting, boiling, sautéing) Ability to adjust recipes for texture-modified diets Time Management Ability to coordinate and prepare meals on time for multiple meal periods (breakfast, lunch, dinner) Efficient multitasking in a fast-paced kitchen environment Communication Clear communication with dietary aides, nursing staff, and supervisors Ability to document food temperatures and meal changes accurately Teamwork Collaborative work with dietary team members to ensure timely and accurate meal delivery Adaptability Flexibility to adjust menus and meals based on resident needs or supply availability Attention to Detail Accuracy in following diet orders and preventing cross-contamination for allergens
Minimum Qualifications
High School diploma or equivalent Previous experience required ServSafe Certification Required or willing to obtain upon hire
